To perform an emote in Elden Ring Nightreign, you need to bring up the equipment menu by pressing the menu/options button on your controller or escape on the keyboard. After that, access the emote section by pressing Y / Triangle / 1 and go through available emotes and hit confirm (A/X) on the one you want to use.

You can perform an emote during an expedition or at the Roundtable Hold.

Keep in mind, emotes do not give you invincibility frames, so don’t emote in front of enemies and bosses, they will hit you.

If you like a few particular emotes and use them regularly, you can set them as a favorite by hovering over them in the emote menu and pressing X/Square on the controller, or 2 on your keyboard. This will neatly place them on the top row of the menu with a marker on the top left.
